This chia pudding is cool, creamy and lightly sweet, with a texture somewhere between rice pudding and tapioca. Coconut milk makes it rich, almond milk keeps it from feeling heavy, and a layer of fresh berries on top adds a bright, tart finish. It takes five minutes to mix and is ready in jars when you wake up.

Chia seeds clump if you add them all at once and walk away. Stir well, wait 10 minutes, then stir again before the jars go in the fridge. That second stir breaks up the gel pockets that form around the seeds, so every spoonful sets smooth instead of having a dry knot at the bottom.

Ingredients

Makes 4 jars, about 3/4 cup each. Tap an item to check it off.

Equipment

  • Mixing bowl or 1-quart jar
  • Whisk
  • 4 small jars with lids

Instructions

  1. Whisk the coconut milk, almond milk, vanilla, stevia, cinnamon and salt in a bowl until smooth.
  2. Sprinkle in the chia seeds while whisking so they do not clump.
  3. Let the mixture stand 10 minutes, then whisk again, scraping the bottom of the bowl.
  4. Divide among 4 jars, cover and refrigerate at least 4 hours or overnight, until thick and spoonable.
  5. Stir each jar once more before serving and top with the raspberries and strawberries.

Kitchen tips

  • Add the berries just before serving. Cut strawberries turn soft and bleed into the pudding after a day.
  • For a smoother, mousse-like texture, blend the finished pudding for 30 seconds.

Substitutions

  • Stevia → granulated monk fruit or erythritol blend Follow the package's sugar equivalence. The carb estimate does not include this swap.
  • Coconut milk → heavy cream Use 3/4 cup cream plus 1/4 cup water. Same richness, milder flavor.
  • Strawberries → blackberries Similar carb count and a deeper berry flavor.

Swaps change the nutrition estimate shown above.

Storage and reheating

Fridge
Covered jars, up to 4 days without the berries.
Freezer
Not recommended. The texture turns grainy and watery after thawing.
Reheat
Served cold. If it gets too thick, stir in a splash of almond milk.

Questions cooks ask

Can I eat it after only an hour?

It will be loose. Two hours gives a soft set, and overnight gives the thickest texture.
